Honey Roasted Broccoli & Chickpea Salad

We love meals where you can throw everything on a single tray and let the oven do the rest of the work - and this chickpea salad recipe is one of them! Honey roasted broccoli brings out the flavors of the rest of the dish and is perfect as an accompaniment to your favorite protein or as a healthy, light lunch to brighten up the day. Think minimum fuss, maximum flavor - what could be better?

Ingredients

  • 1 head broccoli
  • 1 can of chickpeas
  • 3-4 mushrooms
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon each of salt and pepper
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp cumin
  • 1 tsp COMVITA MANUKA-HONEY 

Method

  1. In a bowl, brush broccoli, mushrooms, and chickpeas with manuka honey, oil, salt, pepper, and spices.
  2. Place on a baking tray and bake in the oven at 200°C for 20-25 minutes.
  3. Put the broccoli and mushrooms in a bowl and top with the chickpeas.
