Raw Energy Coconut Snowballs

Ever hit the mid-afternoon slump and find yourself craving a sweet snack to see you through till dinner? This coconut snowballs recipe is a must try! Paired with protein-rich nuts, coconut, dates and raw cacao, our manuka honey lends a delicious immunity boost to these little bites of goodness. Make a batch to see you through the next few days and enjoy a coconut snowball (or two) with your favourite cup of tea. Dreamy!

Ingredients

  • 145 Grams Ground almonds
  • 12 Dates, pitted
  • 30 Grams Raw cacao nibs
  • 1 tps Coconut oil
  • 25 Grams Shredded unsweetened coconut plus 2 tps
  • 20 Grams Chia seeds
  • 1 tps COMVITA 83+ 250G MANUKA HONEY

Method

  1. Add the dates to a food processor and pulse until smooth.
  2. Add the coconut oil and continue mixing.
  3. Gradually add the ground almonds and chia seeds.
  4. Add the cacao nibs and 2 tbsp of the coconut.
  5. Add the Manuka Honey and mix well.
  6. Take a spoonful the mixture and roll into a ball, dip the ball into the shredded coconut.
  7. Repeat until all the mixture has been used.
